This isn't authentic, but it is tasty.


Curry mixture -

1/2 tsp cumin
1/4 tsp dry ginger
1/4 tsp curry powder
1/4 tsp tumeric
1/4 tsp black pepper
1/4 tsp spicy chile powder

Lentils

1/3 cup lentils - cooked tender in salted water

1/4 cup chopped onion - fry until the onion starts to brown
1 clove garlic
1/2 tsp grated ginger

400 ml coconut milk (this is more than you need)
curry powder (about half the mixture) - I added more tumeric to adjust the color

Let the coconut milk simmer, drain the lentils. Combine. Garnish with cilantro, if desired.

Eggplant Chutney

1 eggplant - chop in a rough dice, toss with salt and tumeric and let it sit while the lentils cook

1 small onion (sliced thinly)

Final spice mixture
Curry mixture (about half of the powder)
4 cloves garlic
1 tsp grated ginger

Fry the eggplant in oil until it begins to brown. It will turn mushy, and start to dry out. Set aside, and in the same pan, fry the onion until it goes limp. Add the eggplant back and cook until the onion starts to brown. Add the spice mixture, and stir until fragrant. It should be very dark and ideally fairly dry.

Rice -

1 cup basmati
1/4 tsp cumin
1 bay leaf, 1 cardomon pod

Fry basmati with cumin until it goes opaque. Add the spices, and cook in the usual manner.
